Who Prefers Haines?
You may remember his kitchen toil at Larry North's NorthSouth, or maybe PoPoLos. (Lime? Lime? Didn't he do Lime?) Or perhaps you'll recall his turn-around menu work at Cuba Libre and Sipango. Whatever you remember him for, it probably isn't as sales manager for Sysco Foodservices.
Anyway, chef Marc Haines is leaving the plains of Dallas for the cozy shores of Des Moines, Iowa -- hey, it's on the Des Moines River -- home of Pioneer Hi-Bred International. There, he will expand Sysco's business development and review program, which analyzes restaurant and convenience store menus to cut costs and boost sales for better tasting profits. But mostly Haines will be publishing comic books about an amnesiac superhero stripper named Jane, pictured above. Spatulas. Food costs. Red stilettos. Smoking Glocks. Dallas cooks.
