Bonchon Is Closing, and That's a Shame

So long Bonchon® brand wings
I feel like we never made it out of the honeymoon phase. Bonchon opened late last year, promising mountains of Korean fried chicken, bowls of crispy pickled radishes and mug after mug of ice-cold beer. I reviewed the restaurant early this year, watched a few football and basketball games at the bar and generally left fat, drunk and happy. There were other people there doing the same, but apparently there weren't enough of us. Bonchon is closing.

"We are rebranding the restaurant to Ashwood," Wyatt Hurt, a consultant working with the restaurant, explains. Sales were not high enough, so the investment team recently started negotiating a way out of their franchise agreement. Hurt says once they hash out all the details the location will close. He estimates it will take two to three weeks.

After 10 days of brown-paper covered windows the restaurant will re-open as Ashwood, and according to Hurt, the new place will still feature Korean fried chicken wings. There will still be plenty of TVs showing sports and there will be plenty of cold beer too, but that's the last of the similarities.

"We're going to open up the menu to have a broad selection of appetizers, burgers, tacos and salads," he says. Ashwood's menu will also focus on healthier items "to appeal to the masses."

The group is also working with the landlord to increase the outdoor dining space, where they'll also offer live music. Here's hoping they keep the fry cooks, because none of that sounds as exciting as those Korean fried chicken wings.

Read it more carefully, they are basically losing the franchise agreement and keeping the chicken.  I bet well over half their sales were the KFC if not more.  The other Korean foods not so much, so they are replacing those with burgers.  Same beer selections, same chicken options.

Personally I think they should have keep a more indicative name, but I suspect that was part of the deal to sever their franchise agreement.

What's worse, sagging sales or the dreaded "consultant working with the restaurant"?  Cardinal rule of restaurants, know EVERYTHING before you go in........so why would you need some fat f+cker with a cheap tie, that once worked in fast food, and has a degree in business, telling you how to make things work!?  I have run into my share of "consultants', and they are generally lazy, don't like getting dirty and pretty convinced of themselves.

I tried to go to this place and used the Observer map on this page to help me find it. I ended up in Oak Cliff.

The only fried chicken my hubby would eat - we will have to go this weekend.  (And then figure out where this Tto Tto Wa place is for the future.)

Tto Tto Wa in Carrollton - the real thing, not a restaurant consultant in sight

Bonchon was a managerial cluster-eff from the day they opened. I'm shocked that a multinational, intercontinental chain would have so much trouble just opening another new location. It should be turnkey but instead they had nothing but problems for months.

The wings? Meh. Like In-n-Out, I never understood the fanatical zeal for the brand. Only two flavors and little else to the menu when you have Pluckers and Wingstop literally a block away? Good riddance.

I tried them once, dried and tough as shoe leather. No heat even on max.

Much ado about nothing. amf.

@Sotiredofitall I wish Tto Tto Wa would close, as it's the only way I'm going to be able to stop craving their wings every minute of my life

@dallas_paul

this is the problem with franchising; it very rarely is turnkey, and the food suffers once you get it in "cookie cutter mode".

@dallas_paul Wingstop? I mean I enjoy wingstop for the variety, and happy they use larger wings now but c'mon, it aint nothing special.  Im still think the bar I frequent has some of the best wings in DFW

@Sharon_Moreanus Big juicy breaded wings with a nice crunch, and a hot sauce that has a burn but not too bad.  If you want to up the heat, have tossed with crushed red pepper in the sauce.

I'm willing to bet that the Merkin isn't a VIP at Chili's
