100 Favorite Dishes, No. 69: Chicken and Waffles at Jonathon's

Sorry, Erdeljac, it's just that good.
Every chef has one. Some chefs have entire menus full of them -- that dish that they're just not in love with making anymore but that their customers have fallen completely in love with. Try and take it off the menu and pitchforks ensue, or worse, they end up with an empty dining room.
Jonathon Erdeljac's albatross is the chicken and waffles you see pictured above. It's not that he hates making the dish, but you san see him plating up number 732,426 with a deep and heavy sigh. "I left the easy life at Breadwinners to make chicken and waffles till I die," you can hear him saying.
I personally feel no remorse. We all make the bed we lie in, that's how the world works. The chicken and waffles served at Jonathon's are a thing of wonder, with crispy chicken, a soft absorbent waffle and thick, savory gravy that could make the Sunday Times taste delicious. Put a thing like that out into the world and you become responsible for it.
