Every sandwich should be this good.
Cubans are blowing up menus all over Dallas. The toasted sandwiches, loaded with melting Swiss cheese, have made appearances at high-end restaurants like CBD Provisions and San Salvaje, where the classic sandwich is reinvented through the eyes of accomplish chefs. The results are good -- melted meat and cheese is almost always a positive thing -- but they're not the same as the Cuban served at International Bakery, which is a simple, authentic sandwich.
Dallasites have been celebrating the work of Rita and Sara Vazquez for decades. Their International Bakery turns out pastries and breads that will brighten your morning when paired with a sweet cafe Cubano. For lunch, though, the best use of your time here is the Cuban sandwich.
It's impossibly simple, a pairing of pork that's roast in the same kitchen that bakes the bread, and sliced ham, with just enough cheese to keep things glued together. It's griddled with butter sparingly, to keep things from getting too greasy, and arrives in a basket with an extra crisp crust.
