You can find croissants all over town, in grocery stores, coffee shops and cafes, but finding a good one can be a chore. Too often they're soft and underdone, with a chewy consistency and innards that look like bread more than they look like a well made pastry. Croissants like these lack delicate layers and that rich, flaky crust that breaks up into shards when you bite into one.

Rush Patisserie is working hard to save us from these inferior croissants, and you can find them at more and more coffee shops around Dallas. You'll recognize them by their diminutive size and rich mahogany exterior. When you pull one apart, small pieces of crust get tosses into the air like confetti, yielding to an interior almost seems made of air. It tastes of butter and toasted flavors.

You can find them at the Wild Detectives, where they are turned into chicken salad sandwiches, or at Oak Lawn Coffee, where they carry chocolate and versions stuffed with ham and cheese.
