An Ode to Bolsa's White Chocolate Rum Tile, Where Nilla Wafers and Rum Unite in Bliss

In Happy Endings, we travel the part of the globe that says "Dallas" in search of great desserts and great places to eat them.

It's 6:30 on Saturday night at Bolsa's bustling indoor-outdoor bar. The rest of the world may be absorbed in a little drama called the World Cup, but this being Dallas (the center of its own universe), the TV above the bar featuring the match between England versus Italy goes largely ignored. Conversation buzzing around me is not about soccer but, impossibly, the Mavs.

The kitchen staff, though. Thanks to the restaurant's open-kitchen design, I spotted several cooks peeking out from their stations, stealing peeks at the monitor. I even overheard one of the bartenders joke that Bolsa had become a sports bar for the night. Thank Messi none of this interfered with what I came here to accomplish: to be reunited with my old flame, that mind-blowing white chocolate rum tile.

The menu's description of this dessert ("Nilla wafer crust, caramel, & banana") does it no justice. Here's the truth: It's a rum-laced square of creamy white chocolate. This is perched atop a puree of what is very likely your favorite childhood cookie, topped with a halved, bruleed banana and a smattering of berries -- all carefully positioned upon a splash of caramel sauce. It is, unquestionably, one of the best things you could ever possibly eat. Now why don't they put that on the menu? Too wordy?

If you like white chocolate, occasionally eat half a box of Nilla wafers in one sitting, or relish the satisfaction of smashing the flawless, glass-like topping of a crème brulee with your spoon, this dessert is your jam. And, as if delighting your taste buds wasn't enough, it's quite beautiful to behold as well.

Maybe a sugar buzz is all you need to get your night started, or ended, right, but if you're looking for something stronger, you're in the right place. If you're lucky enough to snag the last two seats at the bar, perhaps unaware of Bolsa's reputation for inventive, fresh cocktails, you'd be quickly schooled.

It would be hard not to notice, since you'd be sitting within sniffing distance of ripe berries, limes, and handfuls of herbs stuffed into empty cans of Four Corners' Local Buzz.

Whether you pair your dessert with an upper or downer, what a cool place to take a date. It's bustling but still somehow doesn't let go of its relaxed, Bohemian vibe. The dining room is flooded with soft natural light, while the patio twinkles away with strings of lights. I don't know what that spells in dude language, but to me it translates into romance.
