100 Favorite Dishes, No. 99: Chicken-fried Steak at Tom's Burgers and Grill

I know Tom's Burgers and Grill is good because I reviewed it almost a year ago and I still lament when I'm driving back to Dallas from Fort Worth at night and it's closed. I know you're thinking that it's just that they serve a free beer or two while you dine. But while I'll always find motivation in a cold glass of Bud, it's the chicken-fried steak I'm really missing.
Tom's cooks break up Ruffles potatoes chips until they're just fine enough to cling to a freshly pounded steak. Then, because this kitchen is filled with all sorts of fancy touches most diners lack, like those perfectly cooked fresh green beans, he tosses the chips with a little fresh parsley.
The results are a salty, jagged and crunchy texture encasing a chicken-fried steak that's like no other. Be sure to order the pepper gravy served on the side so you protect that addictive coating, and make sure you don't get your food slogans mixed up. That whole "Nobody can eat just one" thing is for Lay's, not Ruffles. Try and eat more than one of these chicken-fried steaks and you'll never make it to the end of this list.
