Official word just came down from the raw fish heavens: Uchi, the Austin-based sushi joint that's garnered pages of great press and excitement, has secured and is opening a location at 2817 Maple Ave. in Dallas. Before you trident-spear a blue whale from happiness: We're looking at an opening sometime around 2014 or 2015.

Look for instant buzz with the opening the restaurant. With good cause, too: The Austin location is worth its weight in bacon.

How environmentally responsible can all the global consumption of this seafood be ?

These kinds of restaurants are a complete 180 from the Farm to Table movement, or think locally that defines  good cooking and dining.

CK, don't blame it all on the sushi restaurants. They may be in the spotlight for the decline in bluefin tuna, but there are billions of people out there with appetites shaped by evolution, culture, availability and economics.

Local is not necessarily ecofriendly; none of the downtown farmers market vendors advertise organic produce.

Until local, organic etc products can become affordable to the masses, the course is set. Bluefin tuna is the opposite problem. As worldwide consumers become wealthier, they will fulfill cultural preferences, whether they be rhino horns, shark fins, or tiger meat.

I am not advocating giving up. Even one person's choices makes a difference. But don't blame it on the sushi restaurant. Instead, vote with your wallet. Tell your sushi chef you are disappointed in his unsustainable fish and don't buy it. Better yet, find a sustainable sushi restaurant and post it here.

We are all guilty.
