100 Favorite Dishes, No. 33: International Bakery Cuban Dulceria's Cubano

International Bakery Cubano 001.jpg
To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

I took my first bite, and tried to figure out why Rita and Sara Vasquez, the owners of International Bakery Cuban Dulceria in Carrollton, would neglect mustard from their otherwise very traditional Cubano sandwich. I was told it hid the flavors of the mojo marinated pork, roasted till it falls apart into strings. That could be, but every bite I get with a morsel of thinly sliced, vinegary dill pickles I can't help but to think some bright mustard might liven things a little.

No matter.

All you have to do is ask for mustard and you'll get it. And mustard or no mustard this is without a doubt the best Cubano you can buy in Dallas. The one you can get at the State Fair of Texas is pretty good, but it's only available three weeks a year. And Jimmy's? No way. Not even close. International Bakery Cuban Dulceria is way up in Carrollton, but they bake the bread right there. It's soft as a cloud and the hot press toasts the exterior into a thin eggshell of crisp crust that snaps when you bite it.

Best Cubano? This is one of the best sandwiches period.

I love this place!! Totally worth the trip. I always get the Cuban sandwich and a cortadito - it's a shot of espresso with tons of sugar and a bit of milk. Good find :)
