100 Favorite Dishes, No. 16: La Duni's BLTA Pop Over

I know. Never thought I'd see back-to-back popovers on CoA's hundred favorites either, but I'm smitten with La Duni's BLTA popover. The sandwich is a stellar riff of the classic we all know well, and nails every ingredient almost perfectly. When tomato season kicks into full gear in the coming weeks, this thing should be stellar.

I wish the popover were a little more crisp on the outside, but the bacon inside that sandwich more than makes up for it. The pork shatters when you bite into the bread and crunches with every smoky, salty bite. The tomatoes are sliced super thick and the mayo is slathered on sufficiently to make a bit of a mess.

I don't typically order mine with avocado, but the fruit was ripe and soft and made a nice addition to the sandwich. From now on, when I dream of the perfect BLT, it will look a lot like La Duni's popover version.
