100 Favorite Dishes, No. 41: The Scotch Egg At Central 214

To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

I've had my fair share of bad Scotch eggs. Usually the breading is greasy, the sausage is bland and pasty and the egg is over-boiled enough to be suitable for a round of golf. Some of the Scotch eggs I've had came prewrapped in cellophane (those Brits do crazy things), but even fresh versions I've had at bars could use a bit more refinement.

Graham Dodds' version of the British bar snack is everything past versions have lacked. The breading is so crunchy it reminded me of excellent falafel. The coarsely ground sausage packs serious flavor and encases a perfectly cooked hard-boiled egg. Finished with a small dusting of sea salt and a tangle of lemon-kissed greens, Central 214's version is a serious upgrade in Scotch egg cookery.

Snack served these for a delicious split second. I'm glad someone is keeping the fried sausage-y egg dream alive.
