100 Favorite Dishes, No. 99: The Bone Marrow at the Meddlesome Moth

Meddlesome Moth's menu takes some careful navigation. The mussels are a safe bet, and the burgers are fine; other plates veer off course. But ordering the roasted bone marrow is an act of true decadence.

The kitchen splits the bone lengthwise instead of across the bone, creating a long, sturdy canoe instead of a medallion. This makes it easier to scoop up the jiggling spread, but it also creates more surface area for the salsa verde that they heap on with abandon. The staff here knows their beer, too. Ask them for an appropriate paring beyond the IPA listed on the menu and melt into your bar stool as rich bone marrow does the same with your bread.

It's heavy. And heated too far it will completely melt into oil. When properly roasted it's presents a loose custardy texture, a little like flan. It has a rich and beefy flavor that the Moth cuts with an acidic salsa verde, which really brightens things up.

Get two friends. Get eight pints. Dare yourselves. Do what you must. You really, really should try it.

I saw Anthony Bourdain do the Bone Marrow meal in Singapore (I believe) and the way he described it made it sound like pure bliss. Thanks for the story and recommendations. This looks like it would be a fun jump off of the diving board into the culinary abyss!

 I love that episode. He's slurping up that bone marrow through a straw like a champ. Makes my mouth water thinking of it

 yea, i think Bourdain says marrow is his single favorite flavor in the world. or favorite dish. something along those lines. it's hard to disagree with him. when done right, as MM pretty much does, it's simply divine. akin to the simplicity of perfect, fresh sardines, perfect foie gras or even for me the perfect avocado.
