100 Favorite Dishes, No. 91: Devils On Horseback At The Chesterfield

To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

I was worried I wouldn't be able to include this dish in our 100 Favorites list since Michael Ehlert, the chef responsible for the plate, recently flew the coop. I just called The Chesterfield, though, and the devils on horseback remain on the menu.

Don't order these alone; you'll miss the whole point. Ask the bartender to mix you up an Old Fashioned while you wait on your bacon-wrapped, cheese-stuffed dates. The ash and oak in the bourbon featured in your cocktail will draw out the smoky flavors in the bacon while the sweetness of dates and the tang of blue cheese finish the flavor profile that makes the most compelling food and cocktail pairing I've had since coming to Dallas.

Old Fashioned, you say? I wasn't aware that anybody in Texas knew what an Old Fashioned was. That's a yankee drink, doncha' know, only up nort' they makes em' wit brandy, not bourbon.


I tried to wrap a date in bacon one time. She called me a pig and stormed out.


 what a prude...who would turn down bacon sex?


Worse still - she took the bacon with her.


 bacon thieves are the worst. she could have at least worn it first.

I promise you: Grammas are the chefs at The Chesterfield. 

I saw grammas make bacon-wrapped dates at the State Fair Bacon & Eggs competition this year, and now they're on the menu at The Chesterfield? Mmm. Hmm. I'm telling you, they stole those grammas and they made them work at The Chesterfield.

It simply must be true.
