To prepare for this fall's Best of Dallas® 2012 issue, we're counting down (in no particular order) our 100 Favorite Dishes. If there's a dish you think we need to try, leave it in the comments, or email me.

Union Bear's beer list is a reason to go all on its own, but its chicken-fried egg is one hell of a bonus once you get there. With a salty, crunchy exterior, wrapped around a tender egg white, wrapped around a oozing orange yolk, this number owes as much to its sourcing as it does to the chef that handles the dish.

Yellow Prairie Farm in Caldwell supplies the eggs (you can buy similar ovums at Urban Acres in Oak Cliff), and the kitchen consistently turns out golden gushers. My only problem with the item is that it's only offered on the side of a Caesar salad. Imagine a chicken-fried egg BLT and then keep dreaming. That egg would work on anything.

More fried stuff?  Ya'll have to get over this fried business.  The egg should either be baked in a quiche, or folded into an omelet.  That's it, I'm going to deep fry a can of tuna......and make a million bucks!  Fried plates?  Fried donkey balls?  Fried gerbil tonsils with an encrusted creme sauce.

Again, the best thing to eat at the fair is the parm sub in the cooler.

Dear Scott,    Is this a "share plate"?  The one that is SO popular with house frau's, and trendy yuppie types.  What goes well with a "share plate" you ask:

-wine-bored frau's-yuppie moxey-an innate ideal to be attracted to trends, whether they are reasonable, or not-dumb tv show about rich, plastic surgery laden, aging housewives, or a Kardashian
