Tex-Mex Sandra Lee-Style: Matt's Rancho Martinez's Bob Armstrong Dip

You too can make this tasty dip in five easy steps
Matt's Rancho Martinez may be known as a solid Tex-Mex joint with good fajitas and boozy drinks to some, but a secret dip that was so popular it was eventually added to the menu is the restaurant's real claim to fame. Behold, Bob Armstrong Dip, named after a Texas politician who wanted a little bit of everything layered in a single bowl.

Matt's charges $8.95 for a large order of the stuff, but you can create this tasty treat at home, with little to no cooking.

Melt one block Velveeta or other product that contains "cheese food" as a prominent ingredient, preferably in the microwave. Stir often to prevent a skin from forming on the surface, and keep warm. Cheese food will revert back to a solid state if allowed to cool.

Open one container of prepared guacamole.

Open one container of prepared sour cream.
Taco seasoning.jpg
Cook one pound ground beef seasoned with prepared taco seasoning. The directions should be right on the back of the pouch.

In a large bowl, place one ice-cream scoop of guac and one scoop cooked ground beef. Top with enough queso to completely inundate other ingredients and garnish with a scoop of sour cream. Serve immediately with tortilla chips warmed in the oven.

We always get the Bob dip, our son devours it......I love their salsa. Years ago the chile relleno was so perfect, even had a carmelized crispness on the bottom crust of it. The quality of the batter and especially the red sauce has gone down but I still order every time but with green sauce, two margaritas. I speak of the Lakewood location which is being replaced next year by Mi Cocina, pfft. We live in Junius Heights, not snooty Lakewooders, and live so close to it that we walk.

Cheese product? Good.Guac? Very good.Sour Cream? Good.Taco Meat? Good.  What's not to like? It shouldn't be a surprise that this simple dip is so popular. It's basically the start to a "seven-layered dip" and everyone knows that the seven-layered dip is one of the first dishes to go at a party.

That's the first picture I've seen where it's actually layered. Right now Matt's uses what looks like an ice cream scoop and tosses everything in the bowl before pouring on the cheese.

Yeah and isn't THAT Matt's "claim to fame"? Scott, we've lived here longer than you. Didja know Matt's had a place some time ago called Matt's No Place right next door and it wasn't a Tex Mex joint? Try some other things on the menu.

crock pot, one brick of velveeta fake cheese,two bricks of Philly cream cheese,two cans of drained ro-tel,one pound of Owens spicy sausage.

I'm actually shocked Scott made it out to Garland to be honest with you. I'm thinking he didn't, I mean, there are Mattito's in uptown, north Dallas, and Frisco, they all serve it the same way.
