Fried Chicken and Enchiladas: It's What We Do, According to Food and Wine and Serious Eats

Dallas' food has gotten attention from all corners of the internet recently. Food and Wine put together a slideshow that compiles the country's 30 best renditions of fried chicken. Local favorite Bubba's Cooks Country is listed among the nation's greatest fried birds. The restaurant submitted a fried chicken shot so hot it made the lead picture for the slideshow.

In 2008, the Cheap Bastard described Bubba's chicken as good enough to offset a wait in line among throngs of SMUers. They've also received Observer Best Fried Chicken awards not once, but twice.

Two other Texas restaurants made the list as well. The Barbecue Inn, in Houston, is described as having legendary fried chicken that's tossed in flower and cooked to order, and the Highball in Austin boasts buttermilk-brined cast iron fried delicious bird, according to F+W.

In the mood for Tex-Mex instead? Nine enchiladas recently garnered the attention of Ed Levine's Serious Eats website. The piece depicts various fillings wrapped in tortillas and swimming in a sea of sauce. Avila's, BEE, Blue Mesa, Cowboy Chicken, El Fenix, Herrera's, Mi Cocina's, and Mia's all get a mention, with Enchilada's boasting the most food porn-worthy shot. The chicken filling in Enchilada's lights out enchilada is topped with a sour cream sauce and queso and described as "a little over the top" by Serious Eats.

There used two be a couple of great fried chicken places in east Dallas.  There was one at Gaston and Fitzhugh and another on MLK.  Were these both Brother's Fried Chicken?  They were both pretty fab but the MLK location had a lot of personality.  Both had the extra parts--livers, backs, gizzards--not often found at the usual KFC.  I noticed the Gaston location has opened but I think it has a different ownership and menu.

@ Fitzhugh was the famous Henderson Chicken Shack. It is now a Brothers Fried Chicken.

Wow, no Gus' Fried Chicken on the list. It's one of the only reasons to stop in Memphis. The other is Yuengling...

I haven't seen one of those in ages. When I was in college, years ago, an 8-piece, dark, was $2.99. Add some jalapenos, and a couple drinks and two people could eat for about $5. Sometimes twice.  I should see if I can find a Williams.

Oh this ones got me steaming!  Not everything has to be breaded....ya'll know that-right?  Take a typical catfish meal:

-breaded catfish with mayo-deep fried bread (I think ya'll call them Hush Puppies, or somthin')-french fries-cole slaw

Holy crap, if I ate this meal, I'd drive directly to ICU, and check myself in.  As a good Texan American, and native New Englander/Texite, I declare today NO LARD AND GREASY FAT BATTERED STUFF DAY.

That pic looks like nasty dog sh4T!  I'll never understand why ya'll just "cain't" lightly batter it, and pan fry it?  Nope,it has to have to have lardy, greezy, heart stopping oils and batter all up in it.  Here's an idea.....just cook without the skin, without the batter, maybe just seer a nice chicken breast, in a pan.......nope Kerg's, it's gotta kill us.  I'll NEVER understand southern foods, and nasty cuts of meats, and butter, and lard-and we wonder why we are on the "fat" list.  Mix a salad in Bubba!
