Mattito's Bob Armstrong Queso Eating Contest Returns, Without Last Year's Winner

A year ago today, Mattito's in Uptown burst onto the local competitive eating scene with its first ever Bob Armstrong queso eating contest -- a five-minute race to down as much of the famous mix of cheese, ground beef, guacamole, sour cream and pico de gallo as possible.

Last year, Teresa Fullen beat out four guys -- myself included -- to claim the first title with a total of 2 pounds, 14 ounces of dip. She's since moved to Houston, opening up the field to any challenger who'd like to see their name on that trophy and treat themselves to a year's worth of free queso.

This year's "Cinco de Mattito's" in Uptown gets going around 5 p.m., and word is they'll have drink specials and The Monco Poncho performing alongside the contest.

But if you want to know what it takes to be this year's queso queen, or king, read on after the jump for a Q&A with the reigning champ. She won't make it to the contest this year, but we caught up with her on the way to a queso lunch. "I'm doing it in y'all's honor," she told us.

So why'd you enter the contest last year -- was it on a whim, or had you planned to enter?
I was planning on it. I mentioned it to one of my girlfriends and she sent out the email telling all of my friends what the plan was. I said I was going to be in the contest, so they were gonna hold me to it. I had no idea what I was getting myself into.

I was expecting a few little bowls of queso, not those big buckets!

Did you have any particular strategy to your eating?
I knew not to fill up on water or anything prior to it. I saw some of the guys pounding water beforehand. While I was waiting, I Googled eating contests and read the whole 'wiggle' thing, that if you wiggle it helps. It's kind of embarrassing because you can see it in the video.

I used the same chip over again, but I tried to go for the double-layer chips. I scoped out my chips before the contest started.

I had a cheese hangover the next few hours. My biggest regret was wearing that stupid Bizzy shirt. The founder of the company was actually there, so he asked me to wear it. Which I was glad I did because I had on a cute outfit. I'm glad I wore it just because I would've gotten cheese all over myself. I threw up for like two hours afterwards, so it was nice to have that on.

How often did you cash in your free dip -- or were you too sick of it to go back?
No I went back several times. I lived across the street. Every time they said it was me, you could tell my watier went back and told his little waiter friends, because they'd all come by and look.

Any tips for this year's competitors?
Don't drink beer or water beforehand. Drink margaritas. The sugar doesn't fill you up as quickly;  it makes you hungry. That's what someone told me there.

Just stay low and hover.
