Foodways Texas Offers a Tasty Road Trip to Gulf
Foodways Texas, the new organization that aims to "preserve, promote and celebrate the diverse food cultures of Texas," has announced an event that should help make sense of all the fancy words in its ambitious mission statement.
Tickets for the group's first symposium in Galveston go on sale tomorrow. For $285, attendees will receive four meals -- including one prepared by Smoke's own Tim Byres -- and a day's worth of scholarly sessions on Gulf Coast foodways.
"It should be a great time," executive director Marvin Bendele says. "We want to educate people on what Texas has to offer."
Bendele says he's learned a great deal about the Gulf's immigrant fishing communities in the process of putting together the two-day event, which begins on February 25 with a dinner at the Texas Seaport Museum. "There are a couple of ships outside, and we're putting a bar on one of them," he promises.
Bendele is still finishing the speaker schedule, but says the agenda will include a talk by a Gulf Coast folklorist and a panel moderated by Houston Chowhounds leader and restaurant owner Jenny Wang.
The symposium will conclude with a dinner at Gaido's, a seafood institution Bendele says is back on track after a few wayward years.
"We ate there recently, and it was absolutely amazing," he says.
