To celebrate Dallas Observer's "Best of Dallas" 2010, available this week, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. Don't hesitate to share your own nominations in the comments. More of the dish's tasty details are after the jump.

No. 4: Elvis Green Chile Fried Chicken at Chuy's

Yes, we know. Technically, this New Mexican style comfort food tribute to The King is chain food. Yet, Texas food guru Robb Walsh thought enough of this dish to print the recipe in The Tex-Mex Cookbook. (Where you will learn that the secret to the batter's crunch is Lay's Potato Chips.) Also, former James Bond writer Raymond Benson used the Austin branch as one of the settings in his novel The Facts of Death. In any case, the chicken is covered in enough green chile sauce to thoroughly pepper your sinuses. But don't worry, merely order a cerveza or one of the excellent mojitos, and soon enough your heart will be light and merry, even if your significant other says you ain't nothin' but a hound dog.

Editor's note: We'd like to clear up a little confusion among some of the many fine commenters here at City of Ate. This list of favorite dishes is not ranked. It's just random. No. 4 is not necessarily better than No. 87. We say that in the intro, but really, who reads notes in italics? So anyhoo, those of you who placed bets on what our No. 1 dish will be might want to call your bookie -- or contact the editor and see if some mutually beneficial financial agreement for a fix might be reached. Hurry. That not-really-No. 1 entry is coming up quick.
