100 Favorite Dishes: Capricciosa Pizza

As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. These dishes are in no particular order. Some are little known, others celebrated. Some are pricey, others can be eaten on the cheap, but all are delicious to the extreme. No. 59: Capricciosa Pizza at Il Cane Rosso Truck

Bet you didn't know damn fine pizza is available in Dallas. You didn't? Read on! While the Big D has a long way to go before it can imaginably secure a spot along side other pizza capitals like New York, Chicago and, obviously Naples, Il Cane Rosso Truck certainly helps the cause. Owner JayJerrier has been serving Neapolitan-style pies from his mobile pizza oven since March 2009. It's hard to go wrong with any of the classically made pies; however, the pie in the sky is the elaborate Capricciosa, composed of San Marzano tomatoes, fresh mozzarella, prosciuotto cotto, artichokes, olives, mushrooms and basil.

Like all the pizzas on the menu, the Capricciosa is made to order in a custom-built wheeled oven that reaches a temperature of 900 degrees, and the pies are ready to munch in two minutes. I guess you could go for the simple and uber-traditional Margherita (San Marzano tomatoes, fresh mozzarella and basil) but why go small in Texas?

Finding Il Cane Rosso truck can be a bit of challenge. Jerrier recently returned from vacation and will be back at X10 Cellars beginning today, July 7. You can also have him bring the oven to you for special events by calling 214-577-6747, but be fast, he says his July weekends are already pretty booked.
