100 Favorite Dishes: Apple and Berry Crisp at Salum

As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. No. 79: Apple And Berry Crisp at Salum
There has long been a problem with fruit crisp desserts. Too much fruit. Not enough crisp. Abraham Salum has finally righted that wrong.
The Apple and Berry Crisp at Salum is a mixture of apples and raspberries served in a massive portion with a simple side of Crème Anglaise. The kitchen will happily bring it to you a la mode if you prefer, but the Crème Anglaise is a better bet. The dessert comes piping hot and the ingredients are no mystery here: flour, brown sugar, cinnamon, salt, butter. The slight of hand lies in the preparation and the abundance of rich, crunchy, not-too-sweet topping. Think grandma's apple pie meets haute cuisine.
