City of Ate's 100 Favorite Dishes: #98
Mashed Tater Parfait at Cowboy Chow
You just finished a long day at the office and you're craving some ol' fashion chuck wagon cooking. Well, this isn't the 1800's and you're not on the City Slickers 3 movie set, but if you take a drive to Deep Ellum you might find what you're looking for. Cowboy Chow's "open range" concept of cooking allows patrons to dine as if they were real cowboys, kind of. One of the restaurant's most popular dishes is the Mashed Tater Parfait, which is layers of brisket, mashed potatoes, cowboy caviar (vegetable medley with black beans and onions), and topped off with sharp cheddar cheese and tortilla strips. It's a simple twist on a food layering dish, and good enough to feed your inner cowboy.
