As a countdown to the Dallas Observer's "Best of Dallas" 2010, City of Ate is serving up 100 of the favorite dishes we crave, savor and hope to scarf down again soon. No. 91: Chicken Gizzards at Sushi Yama

How do I begin to extol the gloriousness that is the fried chicken gizzards at Forest Lane's tucked-away gem, Sushiyama? Living in a city where sometimes I miss a certain degree of culinary variety, this dish is a delightful find.

Gizzard, a muscle-lined digestive organ found in birds, is typically quite bland, but is loved by those who enjoy its chewy texture. When seasoned, coated in flour and fried, the result is an explosively pleasurable experience of textures and flavors -- simultaneously crunchy, chewy, salty, garlicky and juicy. A squeeze of lemon cuts the grease factor and rounds out the whole dish by adding a bit of citrus. How much do we love this dish? We're hoping that putting it on this list convinces those who have never fathomed ever eating gizzard to give it a try. Chicken never tasted this good.
